Blend tomatoes, red pepper, scotch bonnet and one onion into a smooth base.
Fry the sliced second onion in oil, add tomato puree and cook out for 2-3 minutes.
Pour in the blended base and fry down until reduced and the oil rises — this builds the flavour.
Add seasoning cubes, curry, thyme, bay leaves and a little stock; simmer 5 minutes.
Stir in the washed rice, add just enough stock to cover, cover tightly and cook on low until tender.
Fluff, rest for 5 minutes, and serve hot with chicken or plantain.
