Vickdian Pepper Seasoning — 200gSeason and boil the assorted meat and stockfish with onion until tender; keep the stock.
Blend or mix the egusi with a little water into a paste.
Heat palm oil, add sliced onion and blended pepper, and fry briefly.
Add the egusi paste in small lumps and let it fry in the oil for a few minutes.
Pour in the meat stock, add crayfish and seasoning, and simmer 15-20 minutes.
Stir in the greens, cook 5 more minutes, and serve with pounded yam, eba or fufu.
